St. Patrick's Day!

I'm really excited that Saint Patrick's Day is going to be coming up soon! I know that its a few weeks away but I look forward to a hearty corned beef and cabbage dinner every year! My mom makes the best corned beef that I have ever had! She slow cooks it all day in beer so by the afternoon it is so tender and yummy :) This year we are going to have a huge party at my house and invite some neighbors and friends. Usually we just have a small dinner at home but this year is different and I cannot wait! My boyfriend's parents are going to come over and have some authentic corned beef since they aren't Irish and never made it the way my mom has. My family is not really authentic about any one nationality, but we celebrate all of the holidays from my mom and my dad's sides of the family.

It's a little late...but I also love Valentine's Day! This year I was in class most of the day, but after class my boyfriend and I made dinner then went out for ice cream, then afterwards we watched a movie and hung out. He got my flowers with sparkles on them and my dad (my forever Valentine <3 ), sent me some flowers that were called "Cotton Candy"! He said it reminded him of Katy Perry, who I am love! My dad is such a mush and I love him! Holidays are not always the simplest times, but they bring people together and give you the chance to show people how much you love them. Even if that means cooking them corned beef!


This little cutie pie looks just like my dog Jack...maybe he'll look like this for his first St. Patrick's Day with my family this year!

  1. YUM! I can not wait for corned beef and cabbage!! I am not even Irish, but my grandma makes amazing corned beef and cabbage too! Just like your mom, she slow cooks it all day! It's one of my favorite meals! lol... and I love the cotton candy flowers... that does sound like Katy Perry!!

  2. Jill! You know how excited I am for St. Patrick's Day too! Corned beef and cabbage is delicious! And that is so cute how Eli's family is coming over too!! That was so sweet of your dad to send you the Cotton Candy flowers on Valentine's Day because it reminded him of Katy Perry!

  3. I'm so excited for St. Patrick's Day! I'm jealous about your corned beef and cabbage dinner! My mom is Irish and we never have an authentic Irish meal... it's so sad! I'm so glad you had a nice Valentine's Day too, how adorable! ♥

  4. I'm with you. St. Patrick's Day is my second favorite holiday...........next to Thanksgiving. I think I like these two days because friends and family get together to eat. Love that corned beef cooked in beer as well. I always start celebrating St. Patrick's Day the minute I flip the calendar to March. I try to wear something green every day prior to St. Pat's Day. I would like to know if you put the pink away for this particular day.........or do you wear the pink with the green?

    On a more serious note. I would very much like to hear about the teacher that you are observing and I would like to hear more about the students in the classes that you are observing. How are these students enjoying reading the Paulsen book? Can they relate to this particular story? Has this teacher used any of the other Paulsen books with her class. Please talk more about your school visits and what you are learning. Dr. Ries
